Is 480W the only option on this platform?

No - 480W, 640W and 800W are all available on the same frame. This page documents the 480W build, which is the mid-size unit in a three-wattage family aimed at commercial rooms rather than tents.

This build offers remote, timer and WiFi - what is actually included?

Two-channel dimming with a smart remote, an onboard timer, WiFi control and RJ14 daisy-chain ports. The practical effect is that a row of fixtures can be linked and scheduled from one point, with the second channel reserved for a separate spectrum group.

IP65 on a bar fixture - what does that allow?

IP65 adds protection against water jets to the dust sealing that IP54 already covers, which is why this unit is specified for rooms that get washed down between cycles. It is still not a submersible rating - the difference is that a directed hose is now within spec.
